Even Tea Concentration: When tea leaves are steeped in a pot, the tea at the bottom is usually stronger than the top. If poured directly into multiple teacups, the first and last cups will taste different. Pouring the tea into a tea pitcher first ensures a uniform strength for each guest, hence the name "fairness pitcher."
